Spinach & Feta Cheese Muffins

BY SUSAN LEMON — Melt the butter, add the buttermilk and eggs. Beat till light and fluffy. Mix the dry ingredients together and add the melted butter, buttermilk and egg mix, stirring until they come together. Lastly stir in the Feta cheese and spinach. Spoon into greased Muffin cups and sprinkle the top with an extra bit of Paprika and Parmesan Cheese. Bake at 350 degrees until golden brown.

2 Oz melted butter
I cup of Buttermilk
2 eggs
9 Oz plain white flour
2 tsp Baking Powder
Salt & Pepper to taste
½ tsp Paprika
6 Oz Cooked/Chopped and drained Spinach
6 Oz feta cheese crumbles
